Ready, Set, Go! | Schwallier’s Country Basket News | August 2014

The day we’ve been waiting for all year is just about here—opening day at the farm! Beginning Monday, August 18, you can drop in to pick or pick up juicy raspberries, see the animals, and simply enjoy sun-drenched, late summer days—country style! We’ll still be putting the finishing touches on the market, but we’ll have fresh-baked doughnuts, local peaches and other goodies ready for purchase. Here’s a look at what we have going on in the next few weeks.

Ripening Raspberries

Delicious, juicy—and full of antioxidants and vitamins—what’s not to love about raspberries? Our patch is ripe and ready for picking. You have the option to pick your own or buy them fresh in our market.* Good enough to eat straight off the bush, and also perfect for late-summer dishes. One of our favorite ways to use raspberries is in this simple, satisfying pie.

Schwallier’s Light & Fruity Raspberry Pie
For the raspberry filling—
3 oz. package raspberry Jell-O
2/3 cup boiling water
2 cups ice
8 oz. tub of whipped topping/Cool Whip
1 pint of raspberries, washed

Dissolve Jell-O in boiling water. Add ice to thicken quickly. Stir for about two minutes until more of the ice is melted. Remove remaining ice. Add the Cool Whip and blend with wire whisk. Fold in raspberries. Pour into graham cracker crust and top with remaining crumbs. Refrigerate to set.

For the graham cracker crust—
1 Package of Graham Cracker Crumbs
1/2 cup sugar
6 tblsp of melted butter

Combine 1 1/4 cups (1 package) of graham cracker crumbs, sugar, and melted butter. Mix with pastry blender. Reserve 1/4 cup of crumbs for topping. Press firmly into 9- inch pie plate and chill to harden.

We can’t get enough of these berries! Come on in and get yours while they last. (*The season is just starting, so already-picked raspberries in the market may be limited at first, but will pick up quickly over the next few weeks.)

New Kids on the… Farm

The stork is about to make (several) very special deliveries to our farm soon. That’s right, we’re expecting baby goats! The kids are due around the end of August/early September. To celebrate, we need your help. We’re holding a naming contest for the first kid to be born this season. ‘Like’ us on Facebook to get the details. We’ll post a picture of the baby once he or she is born. Comment on the picture with your name suggestion… the name with the most ‘Likes’ wins! In addition to naming rights, the winner will receive a half gallon of fresh-pressed apple cider and a half dozen of our delicious doughnuts.

Go Green! Go Blue! Go through our corn maze!

Get ready for a challenge… our corn maze will be opening soon. We had a little (OK, a lot) of fun getting this year’s maze ready and couldn’t resist working in an in-state rivalry. If you were to fly over our field, this is what you’d see:

The corn maze officially opens on weekends in September, but did you know we also schedule special group times? We even offer ‘Corn Maze Nights’ where you provide the people and we provide the campfire, hot dogs and s’mores.* Call now (616-785-9896) to schedule your group!
